The Ethanol Formation of Chito-monosaccharides with Saccharomyces Cerevisiae and Saccharomyces Bayanus

Abstract
There are two solutions of yeasts, which contain chito-oligosaccharide (Saccharomyces byanus: Sb-1 = 10%, Sb-2 = 12%, Sb-3 = 14%, Saccharomyces cerevisiae: Sc-1 = 10%, Sc-2 = 12%, Sc-3 = 14%, chito-oligosaccharide concentration 10%, 12%, 14%w/w) and we checked the changes of pH, reducing sugar, CO2 and alcohol Production. The pH reduced clearly at the second day, and that continued till the sixth day. After the fermentation, the lowest pH was 3.69(Sc-1) and the highest was 3.88(Sb-3). The reducing sugar was also reduced at the second day(Sc-1: 52.7%, Sb-1: 37.2%). After the fermentation, Sb-2 showed the reduction of 65%, which is the highest and Sc-1, Sb-1 showed the reduction of 62%, which is the lowest. The CO2 production was also a lot at the second day of fermentation. The most production was 1.8g from Sb-3 and the least was 0.2g from Sc-1. Final production was 2.7g from Sb-3 and 0.5g from Sc-1. The highest alcohol production presented at the second day as well. Sb-3 produced 1.2% of alcohol and Sc-1 produced 0.1%. At the end, Sb = 3 produced 2.3% of ethanol and Sc-1 produced 0.3%.
